Benedetta Vitali

Chef Benedetta Vitali has lived and worked all her life in Florence, Italy. In 1979, she co-founded the popular restaurant Cibrèo with Fabio Picchi, offering their fellow Florentines a connection to a traditional Tuscan cooking style that had been all but forgotten in the postwar trend of convenience foods. In 1999, Benedetta opened the trattoria Zibibbo, emphasizing fresh produce from nearby small farms and introducing her original interpretations of classic recipes.

Cooking Classes

Benedetta offers cooking classes at the Badia a Coltibuono, in Chianti. Her cooking courses are not "lessons" in the usual sense but rather total immersion in the kitchen. Students are personally supervised by Benedetta as they observe and participate in all of the steps of preparing Tuscan dishes.  Benedetta enjoys sharing her gifts with everyone, from the amateur to the professional, who wants to improve their skills in the kitchen. A Proposito di Benedetta

Benedetta Vitali ha iniziato la sua carriera nella ristorazione aprendo il Cibrèo con Fabio Picchi nel 1979. Nel 1999 ha creato lo Zibibbo. Oltre che della cucina dei ristoranti si è sempre occupata di alimentazione compatibile con l’ambiente e la salute. Ha pubblicato diversi libri di cucina in Italia e negli Stati Uniti. Da anni fa corsi di cucina aperti a privati ma sopratutto collaborando con associazioni al fine di promuvere l’educazione alimentare. Continuare.
