Benedetta, in the first episode of Salt Fat Heat Acid on Netflix, shows host, Samin, how to prepare pasta for ragu. Samin Nosrat, who met Benedetta at Chez Panisse and interned at the Zibibbo in 2004, appears with her in a segment in the teaching kitchen at the Badia.

Hello Benedetta - We have just returned to Boston and I wanted to write a quick follow up note to you.
Our 2 evenings with Duccio and yourself were absolute highlights of our holiday visit to Tuscany. Our entire group had an incredible amount of fun learning from you and enjoying 2 fantastic dinners. Seemed like we all were able to enjoy a few laughs in the meantime.
I will be sure to mention how well our lesson worked out at the Villa Le Colline, and hopefully that could result in other guests seeking you out as well. The "club" we belong to is called Quintess, and a number of visitors to the Villa are members.
Once again, thanks so much for coming to the villa for these sessions. Both evenings will be memorable for all of us.

New cooking classes in Tuscany
I am very happy to announce that beginning in the spring of 2015 I am the head teacher at the cooking school of the Badia a Coltibuono. This is the famous school that was founded by Lorenza de’ Medici near Gaiole, in Chianti, about an hour from Florence. The Badia is a thousand-year-old abbey that was transformed by the Stucchi Prinetti Family into a highly praised winery, a restaurant, and a lovely inn. We are offering one-day immersion courses in Tuscan cooking as well as two-day (three-night) intensive residential courses to discover a range of Tuscan dishes. E-mail me if you are interested and I will have the school contact you to schedule your course.
Although the Badia is now my first priority, I am also occasionally teaching in town at a new school called the Florence Food Studio, in Oltrarno near Santo Spirito. Here we offer one-day courses with lunch or dinner for groups of up to ten persons. Write to me with the dates you are interested in a course and I will let you know my availability.
